HONEST PICKLES

Here are instructions on how to make our Honest Pickles. NOTE: This is a recipe for a large jar of pickles so you can keep them in the fridge for future burgers and salads.

  1. Slice 2 washed cucumbers at around 3 mm thickness 

  2. Add to a tray and salt the cucumber slices and leave for 30 mins to extract the water.

  3. Add 250ml cider vinegar and 1 tbs sugar in a pan and heat at a low temperature dissolve the sugar and bring up to a simmer then remove from the heat.

  4. Add 1 tsp of yellow and 1tsp of black mustard seeds and mix well so they infuse and return to the heat for 10 mins just below simmering stage.

  5. Add the salted cucumbers to the hot brine (once ready)

  6. Chop fresh dill finely, and fold into the brined cucumber mix, mix well to distribute all ingredients.

  7. Transfer the pickles to a clean jar. You’ll need to wait a few days for these to pickle, the longer the better, however you can taste at your leisure.
