We've created a modern Eastern Mediterranean burger with our Spitalfields neighbours, Brother Marcus. Since it's founding in 2016, Brother Marcus has become famous in London for its Crete-inspired small plates and brunch. So much so that they released a bestselling brunch cookbook in 2023.
The burger includes a 'Kasundi' Tomato Jam, Brother Marcus's alternative to ketchup. A slightly spicy tomato sauce cooked down with sugar until it becomes jam. We've also got za'atar shoestring fries seasoned with oregano, sumac, marjoram, thyme and salt - giving you that crunch in the burger. The sauce is a coriander confit garlic mayo, slow cooking garlic spiked with Brother Marcus's fragrant green hot sauce, also known as 'zhoug'.
